Consistency: Hydration, salt, and yeast ratios stay identical no matter how much dough you're making.
Easy scaling: Double or halve a recipe by keeping percentages fixed and changing only the flour weight.
Recipe comparison: Quickly compare hydration levels or fat content across different bread or pastry recipes.
Professional standard: Used in commercial and artisan bakeries worldwide for formula documentation.
Baker's percentage (also called baker's math) is a system professional bakers use to express every ingredient in a recipe as a percentage of the total flour weight. Flour always equals 100%, and everything else — water, salt, yeast, sugar, fat — is measured relative to it. This makes it easy to scale a recipe for any batch size, from a single loaf to a 50 kg commercial mix, without recalculating every ratio by hand.
Baker's Percentage = (Ingredient Weight ÷ Total Flour Weight) × 100
